The only difference is that this cauliflower soup isn’t made with cream. There’s no milk, either. Instead, the cauliflower’s natural starches that come out when it’s roasted provide the creaminess. It also helps because the roasting gives it a nice toastiness. When the cauliflower is pureed, it turns into a magnificent velvety liquid gold. And, honestly, the nutritious cauliflower soup would be delicious if you stopped there. But, for that extra ‘creamy’ flavour, I opted to add a hearty spoonful of greek yogurt.

How to Make Cauliflower Soup with Roasted Cauliflower

Roast the cauliflower – I’m sure you weren’t expecting that. Cut two heads of cauliflower into florets and roast for 40 minutes, or until golden brown around the edges. Before proceeding on to the following step, allow the cauliflower to cool somewhat.
Blend the cauliflower, chicken broth, sherry, salt, pepper, and yogurt in an immersion blender or conventional blender until smooth and no cauliflower pieces remain. If the soup isn’t hot enough for your liking, return it to a pot and heat it up again (although it also tastes amazing cold).
