I’m a huge fan of nutritious soups. Especially when the majority of their calories come from veggies. And it’s much better when they’re creamy. All of the criteria are satisfied by this Creamy Roasted Cauliflower Soup.

The only difference is that this cauliflower soup isn’t made with cream. There’s no milk, either. Instead, the cauliflower’s natural starches that come out when it’s roasted provide the creaminess. It also helps because the roasting gives it a nice toastiness. When the cauliflower is pureed, it turns into a magnificent velvety liquid gold. And, honestly, the nutritious cauliflower soup would be delicious if you stopped there. But, for that extra ‘creamy’ flavour, I opted to add a hearty spoonful of greek yogurt.

In addition, the yogurt’s acidity is exquisite.


How to Make Cauliflower Soup with Roasted Cauliflower

Guys, This roasted cauliflower soup is going to blow your mind with how simple it is to make. Are you prepared? 

Roast the cauliflower – I’m sure you weren’t expecting that. Cut two heads of cauliflower into florets and roast for 40 minutes, or until golden brown around the edges. Before proceeding on to the following step, allow the cauliflower to cool somewhat. 

Blend the cauliflower, chicken broth, sherry, salt, pepper, and yogurt in an immersion blender or conventional blender until smooth and no cauliflower pieces remain. If the soup isn’t hot enough for your liking, return it to a pot and heat it up again (although it also tastes amazing cold). 

Serve roasted cauliflower soup with microgreens, roasted cauliflower, and a swirl of greek yogurt on top. You may make your soup as basic as you like!

  • 2 cauliflower heads, sliced into florets
  • 2 tablespoons extra virgin olive oil
  • 3 1/2 quarts chicken stock
  • sherry, 1 tblsp
  • 1 teaspoon kosher salt
  • a quarter to three-quarter teaspoon of black pepper
  • a third cup of Greek yogurt


  1. Preheat the oven to 350 degrees Fahrenheit. Toss the cauliflower pieces with olive oil before placing them on a baking dish and roasting for 40 minutes, flipping halfway through. Allow to cool slightly before serving. (At this point, you may keep 4-6 florets for garnish if you desire.)
  2. Pulse cauliflower with chicken broth, sherry, salt, white pepper, and greek yogurt in a blender or immersion blender until smooth, approximately 1 minute.
  3. Microgreens, saved cauliflower pieces, and extra yogurt should be added to the soup before serving.
