Creamy Coconut Chia Pudding

This simple, healthy snack is a vegan version of the breakfast cereal. It’s perfect for those mornings when you’re craving something light and satisfying that won’t leave you feeling heavy or sick afterwards.

I used to believe that chia pudding was some kind of mystical concoction prepared with 12 ingredients and baked with a thermometer to get the proper gelled consistency. However, this is not the case. Chia seeds and almond milk are the only ingredients in a basic chia pudding recipe. When you chill the chia seeds in the almond milk overnight, they swell up, absorbing most of the liquid and forming a gel-like outer layer that gives chia pudding its wonderful thick consistency without the need of any additional binders.


Of course, with such a small number of components, you’ll want to ensure that each one is of the highest possible quality. So I went with organic black chia seeds and Almond Breeze Almond Coconut Unsweetened Vanilla Blend, which is my absolute favorite almond milk. It was the ideal basis for this creamy coconut chia pudding, which was flavored with a dash of coconut and vanilla.


The tastes were then enhanced with the addition of coconut and vanilla extracts, as well as a touch of honey for sweetness. For the whole dish, just 2 teaspoons are required. Would a coconut cream pie be complete without some toasted coconut on top? I used thick coconut flakes, but you may use whatever kind you have on hand!

Toppings for this chia pudding may be changed up as desired. Mini chocolate chips would add a great touch and make this a healthier treat. For a pina colada feel, add pineapple instead of banana, or leave the toppings off entirely for an extremely simple breakfast.

I have to admit, this is one of my all-time favorite simple breakfast dishes. It was simple to make and kept for over a week in my refrigerator.


Chia Pudding: How to Make It

Making homemade chia pudding is as easy as combining all of the ingredients and letting the flavors meld in the refrigerator. Giving the chia seeds plenty of time to soak up all that almond milk sweetness is crucial in any chia pudding recipe. I suggest chilling your almond milk chia seed pudding for at least eight hours, but longer time is much better!

Make the chia pudding in bulk and scoop out each amount into a jar ahead of time to make your life easier. This way, if you need to, you can take a jar and consume your pudding on the move!

  • 2 tbsp. agave nectar (can sub honey)
  • 1 teaspoon essence de coco
  • vanilla extract (1/2 teaspoon)
  • 1 banana, sliced
  • 2 tbsp. coconut flakes, toasted
  • cashews (2 tblsp.)


  1. Combine chia seeds, Almond Breeze, agave, coconut essence, and vanilla extract in a big mason jar.
  2. To blend, give it a good shake, then chill for at least 8 hours (preferably overnight).
  3. 1 cup chia pudding, spooned into a tiny jar in the morning Sliced banana, toasted coconut flakes, and cashews go on top!
