I have to say something before we go into these coffee cake muffins. I wasn’t planning on saying anything, but I’m at my wit’s end. Here’s the deal: COFFEE CAKE DOESN’T CONTAIN COFFEE. It was wonderful to have things off my chest.

Every time we offer a coffee cake recipe, someone always expresses their disappointment that the dish contains no real coffee. And I understand what you’re going through. It’s a touch deceiving, but coffee cake is named by the fact that it’s a cake that’s designed to be served with coffee.

Ingredients

in order to make muffins

  • melted 1/2 cup unsalted butter
  • 1 cup sugar (granulated)
  • 2 room temperature eggs
  • a half-cup of sour cream
  • a quarter cup of buttermilk
  • vanilla extract (two tablespoons)
  • 2 cups flour (all-purpose)
  • 1 teaspoon of baking powder
  • a half teaspoon of salt

in order to make the cinnamon sugar swirls

  • a half cup of brown sugar
  • 2 tablespoons cinnamon powder
  • a sprinkle of salt

in order to make the buttery crumb topping

  • brown sugar, 1/3 cup
  • 3/4 cup flour (all-purpose)
  • 2 tablespoons cinnamon powder
  • 6 Tablespoons melted butter

to make the glaze

  • a half-cup of powdered sugar
  • 1 teaspoon extract de vanille
  • a sprinkle of salt
  • 2–3 teaspoons of milk

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Grease and line 10 normal muffin pans with cupcake liners. Remove from the equation.
  2. Combine the melted butter and granulated sugar in a large mixing bowl and beat until smooth. One by one, crack the eggs into the mixture. Combine the sour cream, buttermilk, and vanilla extract in a mixing bowl.
  3. Combine the flour, baking powder, and salt in a mixing bowl. Mix until the dough starts to come together (not fully incorporated). Remove from the equation.
  4. Make the cinnamon sugar swirl and crumb topping after that. To make the brown sugar swirl, mix all of the ingredients in a small bowl. Combine all ingredients in a mixing bowl and put aside.
  5. Combine all of the dry ingredients for the crumb topping in a separate bowl. Mix in the butter until the mixture comes together in clumps. Remove from the equation.
  6. Using a big spoon, spoon coffee cake muffin batter into prepared muffin pans, filling them approximately halfway. To keep things constant, use a tiny cookie scoop or 2 Tablespoons if you want to be exact. Place a generous spoonful of the brown sugar mixture on the muffins’ bottom layer. Fill the muffins 3/4 of the way with the same quantity of muffin batter as the brown sugar center.
  7. Using a big spoon, carefully press a large spoonful of crumb topping onto the top of each muffin to ensure it adheres.
  8. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for an additional 15 minutes, or until golden brown and springy to the touch. Allow to cool for at least 15 minutes after removing from the oven.
  9. Make the glaze while the muffins are cooling. In a mixing basin, whisk together all of the glaze ingredients until smooth. Using a pastry brush, drizzle the glaze over the crumb topping. Enjoy!
