Chocolate Turtle Cake

This cake is a traditional English dessert that has been around since the 15th century. It’s traditionally made with flour, butter and eggs mixed together to form a dough which is then baked in an oven or on top of coals like some kind of weird pita bread. Then you eat it as soon as it comes out (not kidding) because the filling inside is made from raspberry jam, currants and brandy cream.

This is a chocolate turtle cake that you can make for your next birthday. It is easy to make and tastes delicious.

In cake form, all of your favorite tastes of a gooey chocolate turtle! This chocolate turtle cake is the ultimate indulgent layer cake for all chocolate caramel fans.

What is the definition of a chocolate turtle?

If you’ve never tasted a chocolate turtle, please accept my heartfelt sympathies. They’re one of my favorite upscale chocolates to pick up at a chocolate store or give as a holiday gift. Pecans, caramel, and chocolate are used to make chocolate turtles. They’re salty, sweet, and delicious, and they’re easy to devour. They also have just the right amount of crunch from the nuts and gooeyness from the caramel, resulting in the ultimate texture combination.

So…what exactly is a turtle layer cake?

Simply put, you take all of the delicious flavors of a classic chocolate turtle and put them into a cake made up of layers of chocolate cake, salted caramel mixed with toasted pecans, and a creamy, dreamy chocolate buttercream to hold it all together. It’s rich, chocolaty, salty-sweet, and oh-so-delicious. Plus, it’s really simple to construct and completely customized!

The following are the main ingredients in this turtle layer cake:

This colorful chocolate cake is really rather easy when broken down. When those three tastes are combined, though, you’re in for a genuine treat.

  • Caramel: If you know us, you know that we love anything with caramel in it. We really like preparing our own incredibly simple homemade caramel. Here’s where you’ll find the rest of our homemade caramel instruction!
  • Pecans: Crunchy, roasted pecans are the fundamental tactile component of any turtle dessert. Unlike conventional chocolate turtles, which utilize entire pecans, you may save a few dollars by using pecan bits instead.
  • Chocolate Cake: For this turtle layer cake recipe, you’ll need a very delicious chocolate cake. And, as luck would have it, we have one. It gets extra marks since it’s prepared in one dish and comes together quickly–no need for a stand mixer!
  • Chocolate Frosting: My favorite cake/frosting taste combination is chocolate atop chocolate. It’s luxurious, tasty, and not too sweet.

Ingredients

as well as the chocolate cake

  • 1 3/4 pound of sugar
  • 3/4 cup cocoa powder (dark)
  • flour (two cups)
  • 1 1/2 teaspoon soda bicarbonate
  • 2 tablespoons powdered baking soda
  • 1 teaspoon kosher salt
  • a quarter cup of vegetable oil
  • vanilla extract (two tablespoons)
  • 3 eggs (big)
  • 1 gallon buttermilk
  • 1/2 cup coffee (highly brewed)

for the caramelized pecan filling

for the chocolate ganache

  • 1 cup room temperature unsalted butter
  • a third of a cup of powdered sugar (about 1 lb)
  • 1 cup cocoa powder, unsweetened
  • 2–4 teaspoons of milk
  • a half teaspoon of salt
  • vanilla extract (two tablespoons)
  • a quarter teaspoon of espresso powder

Instructions

  1. Make the chocolate cake first. Preheat the oven to 350°F and oil and line the bottoms of three 6 inch rounds or two 8 inch rounds with parchment paper. Remove from the equation.
  2. Whisk together sugar, cocoa powder, flour, baking soda, baking powder, and salt in a large mixing basin. Whisk together the oil, vanilla, eggs, and buttermilk in a separate dish.
  3. Whisk together the wet and dry ingredients until no lumps remain. Pour in the brewed coffee and stir until everything is well mixed.
  4. Fill prepared pans halfway with batter and bake for 30 minutes, or until a knife inserted in the middle of the cake comes out clean. Before icing, let the cake cool fully on a wire rack.
  5. Make the homemade caramel while the cakes are cooling. Allow the caramel to cool fully after preparing it according to the recommendations. Place the remaining caramel in a dish and set aside 1/3 cup for pouring on top of the completed cake. Toss in the chopped pecans with the leftover caramel and mix well. Place the mixture in a piping bag and set aside.
  6. Make the frosting next. In a stand mixer fitted with the whisk attachment, place the room temperature butter. Cream the butter until it is light and fluffy.
  7. Scrape down the sides of the basin and stir in the cocoa powder. Begin by beating at a moderate speed and gradually raise to a high speed until the mixture is homogeneous.
  8. To begin, scrape the bowl clean and add the powdered sugar, vanilla essence, espresso powder, and 3 Tablespoons of milk. Beat on low speed until light and fluffy, then gradually raise to high speed.
  9. Place the first layer on a cake stand or flat plate to begin assembling the cake. Half of the caramel filling should be piped around the cake. Repeat with the remaining half of the filling and the second layer on top of the filling. Cover the top and sides of the cake with chocolate frosting, pushing down to cover the sides. Place the cake in the refrigerator for 15 minutes to cool. This will aid in the setting of the icing and filling.
  10. Warm the remaining 1/3 cup of caramel in a microwave-safe dish while the cake is chilling. Pour over the cake’s top, allowing it to flow down the edges. Crush up pecans and sprinkle on top of the cake. Enjoy!
