Christmas, on the other hand, signifies cookies to me. Like Cookie Monster’s degree of crazy when it comes to cookies. Every day, all day. 

Because I bake for a career, I feel obligated to dominate the Christmas cookie game. I bake as if my life relies on it because, whether I like it or not, the Christmas season puts all eyes on me.


So it’s no surprise that these chocolate peppermint sandwich cookies are a hit. They’re simple to create, offer consistent results, and one of my favorite taste combos is mint and chocolate. And what about the sandwich cookies? They’re an immediate crowd-pleaser, after all.

These peppermint chocolate sandwich cookies have a brownie-like flavor. They have the most incredible, rich, chocolaty texture that makes them almost impossible to resist. So, for every party, cookie exchange, and family gathering this holiday season, we’ve been making these chocolate peppermint sandwich cookies.

I’m generally found around the dessert table, nibbling on all of the Christmas cookies, candy bowls, pies, and cakes. It is, without a doubt, the ideal location to be. When I organize a party, I want all of my guests to be there. As a result, we’re going to teach you how to build the finest Christmas dessert table ever:

  1. Choose a taste profile that is a combination of traditional and unique: These Chocolate Peppermint Sandwich Cookies are a holiday staple. For the Chocolate Cookies, follow these instructions:

To make the peppermint buttercream, combine the following ingredients in a mixing bowl.


  1. Preheat the oven to 350 degrees Fahrenheit. Two baking sheets should be greased or lined with parchment paper. Remove from the equation.
  2. 2 minutes on medium speed, cream butter and brown sugar in a standing mixer fitted with a paddle attachment. 1 minute after adding the egg, vanilla essence, and salt, beat for another minute.
  3. Reduce the speed of the mixer to low and add the cocoa, flour, and baking soda, beating just until incorporated.
  4. To scoop dough balls, use a 1/2 ounce cookie scoop (or a 1 oz cookie scoop and split the dough in half). To make a slightly flattened disk, roll each ball between hands to create a perfect circle, then put on prepared baking sheet and press down gently. There should be 32 scoops of dough total.
  5. Remove from the oven after 7 minutes and allow cookies to rest on baking sheets until room temperature.
  6. To prepare the buttercream, mix together the butter, sugar, peppermint extract, and milk for approximately 2 minutes, or until light and frothy. Fold the candy cane bits in gently until barely incorporated. Fill a piping bag with frosting and a medium tip.
  7. Half of the cookies should be frosted, then the remaining cookies should be sandwiched together. Drizzle with chocolate and candy canes that have been crushed! Keep refrigerated until ready to use. In the fridge, it can keep for up to 5 days.
