Chocolate peppermint meringues are a kind of meringues made with chocolate and peppermint extract.
Simply said, this is my new favorite Christmas cookie. The light and delicious Christmas cookie with a crisp and light meringue, dark chocolate, and crunchy candy cane is the ideal respite from all those decadent caramel-filled, buttery sweets. You get the light, sweet taste of a meringue while also satisfying your insatiable chocolate hunger (please tell me I’m not the only one).
They’re also naturally gluten-free (bonus) and the ideal light dessert to round off a sweet holiday meal. Now, I understand that meringues are generally a summertime treat, but I suggest we eat them all year long. They’re simple and fast to make, and they go well with holiday tastes like chocolate and peppermint.
To create chocolate peppermint meringues, you’ll need the following ingredients.
These chocolate peppermint meringues are very simple to create and only take 6 ingredients, despite the fact that they do require a few hours of waiting.
- Stiffly beaten egg whites, like any meringue, will produce the light and airy framework of your pavlova.
- Granulated sugar: Not only will sugar sweeten the egg whites, but it will also aerate them and give them a lovely crisp exterior. However, a gritty pavlova is the last thing you want, so make sure you beat the batter long enough to remove any granules.
- Cream of Tartar: Cream of tartar will aid to stabilize your egg whites and prevent splits in your meringues!
- Chocolate: A high-quality dark chocolate bar, such as Ghiradelli, Lindt, or Guittard, is recommended! Even after an hour in the oven, it won’t dry out or get chalky!
- Peppermint Extract: Because peppermint extract is so potent, you’ll only need 1/4 teaspoon to give your meringues a pepperminty kick.
- Candy Canes or Peppermints: To add a festive crunch to your chocolate peppermint meringues, use candy canes or peppermints. We prefer to use candy canes since they’re simpler to smash, but you can use anything you have!
How to tell whether your meringues are ready:
When it comes to the actual cooking of meringues, I’ve always found them to be a little challenging. Most desserts are poked with a knife or gently poked in the centre, but meringues are fragile. Also, you should definitely put your knives away. It’s a fine line to walk between the mushy marshmallow center and the crisp edge. Because you don’t want your chocolate peppermint meringues to brown or darken in color, you’ll cook them at a low temperature for a long time and then let them cool in the oven for another hour to make sure they’re just set. By preventing any dramatic temperature swings, let it to cool in the oven should prevent any breaking (hopefully!).
When the drop meringues are dry to the touch and sound hollow when tapped on the bottom, they’re done, however it usually takes about an hour!

Ingredients
- 4 room temperature egg whites
- 1 cup sugar (granulated)
- a quarter teaspoon of cream of tartar
- a half teaspoon of salt
- a quarter teaspoon of peppermint oil
- 3 oz. chopped dark chocolate
- 5 crushed candy canes
Instructions
- In a microwave-safe bowl, melt the chocolate for 30 seconds, then stir. Microwave it for additional 15 seconds if it isn’t totally melted. Allow to cool somewhat before preparing the meringue.
- Preheat the oven to 275 degrees Fahrenheit. Preheat oven to 350°F. Line two cookie sheets with parchment paper. Remove from the equation.
- Whip the egg whites on high speed in a stand mixer equipped with the whisk attachment until bright and frothy. Slowly whisk in the sugar, cream of tartar, and salt until stiff peaks form and the sugar granules are entirely absorbed. Mix in the peppermint extract well.
- Remove the meringue from the mixer and drizzle melted chocolate on top. It will naturally swirl when you spoon it, so don’t mix it!
- Scoop the meringue onto the prepared cookie sheet with two big spoons. Between scoops, clean your spoons. Add a sprinkling of crushed candy canes on top.
- Bake the meringues for 1 hour, then switch off the oven, crack it open a crack, and let the meringues dry out for another hour in the oven. Transfer to a cooling rack until dry and hollow when tapped on the bottom. Enjoy!
