Chocolate Peanut Butter Truffles

The pastry that takes a bite out of your waistline.

The “chocolate peanut butter truffles recipe” is a delicious dessert that can be made with just a few ingredients. The recipe includes instructions for making the truffles, as well as how to decorate them.

Everyone have a wonderful Monday! Today is my last full day in Boston before returning to the frozen tundra of Michigan. I’m excited to get back into my kitchen after a three-and-a-half-week hiatus! I’ve got some exciting things coming up in the next few weeks, and I can’t wait to tell you about them.

My peanut butter truffles are featured today. They’re created using just four ingredients and taste fantastic. They’re a recipe for pajamas. You know what I mean? You don’t know what I’m talking about, do you? A pajama recipe is one of those that makes people remark “wow, you’re so elegant,” when all you did was whisk a few ingredients together while wearing your jammies.

Et voilà.

Yes, I coined this phrase. I suppose I’m on a roll with this and crookers.

I had the pleasure of meeting two amazing bloggers this week: Liz from Floating Kitchen and Karishma from Tang & Spice. It was wonderful to meet them both, and I strongly urge you to visit their sites. Liz’s Caramel Chocolate Clusters are on my to-do list. My mouth is watering for Karishma’s Mushroom Bolognese!

Take pleasure in the start of your workweek. This week, my recommendation is to take some time for yourself. When we’re so busy with work, school, and, honestly, not freezing our toes off, it may be difficult to find time to enjoy things throughout the winter. Exercise. Prepare a romantic meal for your significant other. Make these truffles instead!

I’ll be back with more sweets on Friday.

Chocolate peanut butter truffles: how to make them

It’s easy to create these cream cheese truffles, but be sure you complete the following:

Soften the cream cheese – An hour or so before preparing these chocolate peanut butter truffles, let the cream cheese out on the counter to soften. It must be completely soft, otherwise the truffle mixture would be difficult to blend together.

Melt the chocolate in short bursts — To prevent scorching the chocolate, heat it in 30-second bursts in the microwave. To speed up the process, stir the chocolate every 30 seconds.

Add the powdered sugar in stages – it’ll be very hard to whisk in all of the powdered sugar if you dump it all into the mixing bowl at once. Pour in a little amount of sugar at a time, only adding more until the preceding batch has been thoroughly mixed.

Chill the truffles before rolling – Refrigerate the peanut butter truffle mixture for at least two hours before rolling and coating the truffles. If you attempt to roll the dough shortly after mixing it together, the cream cheese will melt all over your hands, making a mess.

Regarding the truffles

  • 8 oz. softened cream cheese
  • 1 3/4 cup chocolate chips, semi-sweet
  • a pound of peanut butter

To apply the coating

  • 1/3 cup finely chopped peanuts
  • cocoa powder, 3/4 cup

  1. Melt the chocolate chips in 30 second intervals in the microwave, stirring after each, until smooth and melted (heating in intervals will prevent the chocolate from burning). Remove from the equation.
  2. Softened cream cheese and 1 cup confectioner’s sugar are combined in a large mixing bowl with an electric mixer. Combine the melted chocolate and peanut butter in a mixing bowl and whisk until smooth. Finally, whip in the remaining 2 cups confectioner’s sugar on medium speed until well incorporated. Wrap the mixture in plastic wrap and place it in the refrigerator for 2 hours to set.
  3. Once the truffles have hardened, scoop the mixture with a melon baller and roll into balls. Half of the recipe should be coated in chopped peanuts and the other half in cocoa powder. Refrigerate for up to a week before serving.
