  • 6 tablespoons room temperature butter
  • 3/4 cup sugar, granulated
  • 1 big room-temperature egg
  • 3/4 cup greek yogurt (nonfat)

  4. Fill muffin pans halfway with batter, slightly short of the top of the lining. Add more granulated sugar to the tops. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for an additional 15 minutes, or until golden brown and springy to the touch. Remove from the oven and set aside for at least 5 minutes before serving!
