Ingredients

  • 6 tablespoons room temperature butter
  • 3/4 cup sugar, granulated
  • 1 big room-temperature egg
  • 3/4 cup greek yogurt (nonfat)
  • vanilla extract (two tablespoons)
  • a half cup of flour
  • 1 1/2 tablespoons powdered baking soda
  • 1/2 teaspoon bicarbonate of soda
  • a quarter teaspoon of salt
  • 5 oz. chopped dark chocolate

  1. Preheat the oven to 425 degrees Fahrenheit. Set aside 9 muffin trays lined with muffin cups.
  2. Cream the butter and sugar in a standing mixer equipped with a paddle attachment on high for 3 minutes, or until light and fluffy (do this the whole time!). It will cause your muffins to bubble up while baking). For one extra minute, beat in the egg. Combine the greek yogurt and vanilla essence in a mixing bowl.
  3. Combine the flour, baking powder, baking soda, and salt in a small mixing dish. Mix into the wet components until they start to come together (not fully incorporated). Mix just until the chocolate bits are incorporated into the batter. The batter will be rather thick.
  4. Fill muffin pans halfway with batter, slightly short of the top of the lining. Add more granulated sugar to the tops. Bake at 425°F for 5 minutes, then reduce to 375°F and bake for an additional 15 minutes, or until golden brown and springy to the touch. Remove from the oven and set aside for at least 5 minutes before serving!
