We tweaked Tollhouse’s original recipe by using browned butter, additional brown sugar instead of granulated sugar, and a dab of vanilla extract to boost the taste.
The outcome is the same gloriously rich, gooey-in-the-middle pie we remember from our childhoods, but with a few more “adult” tastes.
The following day, once all the flavors had a chance to meld, we felt this pie tasted even better cold!

Ingredients
- 1 9-inch pie crust dish, unbaked (store bought or homemade)
- 3/4 cup browned unsalted butter
- 2 big room-temperature eggs
- 1/2 cup flour (all-purpose)
- a quarter cup of granulated sugar
- 3/4 cup brown sugar, packed
- vanilla extract (two tablespoons)
- a half teaspoon of salt
- 1 cup chocolate chips (semi-sweet)
Instructions
- Preheat the oven to 325 degrees Fahrenheit and make the pie dough!
- In a small sauce pan over medium heat, brown the butter. Continuously whisk until the butter foams and becomes golden. Allow to cool fully before serving.
- Beat the eggs till light and frothy in the bowl of a stand mixer. Combine the flour, granulated sugar, brown sugar, vanilla, and salt in a mixing bowl. Whisk in the cooled browned butter until everything is well mixed. The mixture will be thin and runny at the same time! Combine the chocolate chips and fold them in.
- Fill the prepared pie crust with the chocolate chip filling and bake for 1 hour, or until set and a toothpick inserted in the center comes out mostly clean.
- Allow for thorough cooling before serving with a scoop of vanilla ice cream or a glass of cold milk!
