Chocolate Chip Cookie Brownies

It’s always wonderful to have something to look forward to at the start of the week, whether it’s going to the movies, eating your favorite supper, or working out. Because these brownies are deserving of a Monday. In fact, eating these brownies on any given day is a very nice day.

THE BROWNIE BATTER WAS THEN ADDED ON TOP. It’s ludicrous, and there’s no way I’d have it any other way.

My yoga teacher informed me today that if I bring her baked goodies, she needs to share them with others because she inhales them without restraint otherwise. People, that’s how I feel about these chocolate chip cookie brownies. Because I couldn’t stop eating them, I had to give practically all of them away!

But I suppose that’s a good thing since it implies the recipe is excellent.

What is the best way to create brookies?

I’ll admit it: I made these chocolate chip cookie brownies using a commercial brownie mix. But I have a feeling you won’t mind the shortcut since it means you’ll be able to consume them sooner!

You must first prepare the chocolate chip cookie foundation before making the chocolate cookie brownies. I didn’t make any changes to the chocolate chip cookie recipe, so you should be able to follow my directions without difficulty! I would add, however, that you must use room temperature butter in this recipe. (The butter will not cream well if it is cold.)

After spreading the cookie dough evenly in the prepared baking sheet, top with your favorite chocolate candy. Milky Ways were utilized, but any caramel-y, chocolaty candy would do!

After that, prepare the brownie batter according to the package directions. You may certainly bake your own brownies, but I like Ghirardelli’s box mix and used it in this recipe to save time. Bake for about an hour after spreading the brownie batter on top of the cookie dough layer. (Because these brookies are so thick, they take a long time to bake.)

Ingredients

  • 1 brownie mix box + all other ingredients, combined according per package guidelines (I used Ghirardelli double chocolate)
  • 3/4 cup room temperature butter
  • 1 cup packed light brown sugar
  • 1 room temperature egg
  • 1 teaspoon extract de vanille
  • 1 1/2 cups flour (all-purpose)
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon kosher salt
  • 1 cup chocolate chips (bittersweet)
  • Choose from 12–16 small chocolate sweets! (I used Milky Ways, but Rolo’s are also a good option.)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Using parchment paper, line an 8′′x8′′ baking sheet. Remove from the equation.
  2. In a standing mixer, cream the butter and brown sugar on high for 2 minutes, or until light and fluffy. In a separate bowl, whisk together the egg and vanilla extract. Reduce the mixer’s speed to low and stir in the dry ingredients.
  3. Remove the bowl from the stand mixer and fold in the chocolate chips with a spatula. In the preheated baking pan, spread the cookie dough evenly. Place small candies on top of cookie dough after squishing them to break their covering.
  4. Follow the package instructions for making brownie batter. Using a spatula, evenly distribute the batter over the cookie dough and candies. Preheat the oven to 350°F and bake for 55 minutes. Allow 15 minutes for CCC Brownies to cool before removing from pan. Enjoy by cutting into squares!

Notes

*As soon as my baked brownies came out of the pan, I decided to sprinkle some more chocolate chips on top. It’s completely optional, but it’s a wonderful touch!
