Chocolate Caramel Brownies

The brownie is a decadent dessert that’s been around for centuries. It was first known as the “Brunswick” or “Brown Bess,” and later changed to its current name in the 1800s, when it became associated with American Union soldiers fighting abroad during the Civil War.

But it’s difficult for me to find a present that even comes close to expressing my gratitude for all my mother has done for me throughout my life. If we’re fortunate, we grew up in homes where our mothers provided a loving and inviting environment for us. It was overflowing with love and joy. Kindness and fortitude.

My mother was a rock of stability. She worked full-time as a single mother to provide for my sister and me, allowing us to participate in dance class on Mondays, acting on Tuesdays and Thursdays, basketball in the winter, and softball in the spring. So we could acquire those Limited Too glittery jeans and as much gimp as we could braid. She’d come home after a long day at work and prepare a home-cooked lunch for us. Almost every night, cookies or brownies are served.

My mother created a warm and welcome environment in her house in a variety of ways, one of which was by baking brownies and cookies on a regular basis. Our oven was continually producing something, and 9 times out of 10, it was a baked item. It was her method of satisfying her insatiable want for dessert, and it signified love, care, and sweetness to my sister and me.

Underbake the brownies slightly – For the fudgiest brownies imaginable, gently underbake these lovelies. When a knife pushed into the center of the pan comes out mainly clean, these caramel brownies are ready to be removed.

Allow the brownies to cool for 15 minutes before adding the SQUARES — Allowing the brownies to cool for 15 minutes before adding the SQUARES is the key to getting the Ghirardelli SQUARES to adhere to the brownies without melting too much. The brownies will be heated enough to melt the chocolate somewhat, but not so hot that the chocolate will melt entirely.

  • a third of a cup of unsalted butter
  • 1 1/2 cup brown sugar (light)
  • 1 egg yolk + 2 big eggs
  • 1 teaspoon extract de vanille
  • a half teaspoon of salt
  • cocoa powder, 3/4 cup
  • 1/3 cup flour (all-purpose)
  • 9 Ghirardelli SQUARES, Dark Chocolate Sea Salt Caramel or Milk Chocolate Caramel


  1. Preheat the oven to 350 degrees Fahrenheit. Melt the butter in a microwave-safe bowl. Remove from microwave, whisk in sugar, and wait 30 seconds for both to melt.
  2. Stir once more and melt for another 60 seconds. Remove the mixture from the microwave and set aside for 10 minutes to cool.
  3. When the mixture has cooled, combine it with the eggs, vanilla essence, and salt in a large mixing bowl. Fold in the chocolate powder and flour last.
  4. Pour the batter into an 8′′x8′′ pan lined with parchment paper. Bake the brownies for 25-30 minutes, or until a knife inserted in the middle comes out clean.
  5. Allow 15 minutes for the brownies to cool before delicately pressing 9 Ghirardelli SQUARES into the tops. The squares will magically melt somewhat, allowing them to adhere to the tops of the brownies. Cut the brownies into 9 pieces and serve!
