These chocolate peanut butter cookies are simple to make and take less than 30 minutes to prepare. Here’s how you do it: 

Cream the butter and sugar — In the bowl of a standing mixer, cream the butter and sugar until the mixture is light and the sugar is entirely integrated (this will take a few minutes). Then stir in the vanilla and egg until everything is well mixed. 

Add the dry ingredients – Sift together the dry ingredients in a separate dish, then stir into the liquid ingredients until just combined. Hand-fold the peanut butter morsels into the cookie dough, being careful not to overwork it. 

Scoop the chocolate peanut butter chip cookie dough into balls and lay them on a baking tray to bake. Bake for about 10 minutes, then cool for another 10 minutes on the baking sheet before serving.

Ingredients

  • 4 ounces room temperature salted butter
  • 1 fully packed cup Organic Light Brown Sugar from Simply Nature
  • 1 big room-temperature egg
  • 1 cup flour (all-purpose)
  • Baker’s Corner Cocoa Powder, 1/3 cup
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon kosher salt
  • Baker’s Corner Peanut Butter Morsels, 1 cup

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Set aside two baking sheets lined with parchment paper.
  2. Cream the butter and brown sugar together in a medium bowl for approximately 2 minutes, or until the mixture becomes light and the sugar is largely incorporated. Combine the egg and vanilla extract in a mixing bowl.
  3. Sift together the flour, cocoa powder, baking soda, and salt in a separate basin. After that, toss in the dry ingredients until they’re barely incorporated with the butter mixture. Fold in the peanut butter morsels gently but thoroughly, being careful not to overmix the dough.
  4. Scoop 2 teaspoons dough into cookie sheets (I use a 1 oz cookie scooper), allowing approximately 2 inches between each ball of dough
  5. 10 minutes in the oven Allow 10 minutes to cool on the cookie sheet before serving with a glass of milk!
