We’ve done all the testing to find the precise ratio for a frosting that’s just tangy enough, sweet but not too sugary, and so fluffy and creamy you’ll want to lick the bowl clean. We use 1 stick of butter, 4 oz. cream cheese, and a third of a cup of powdered sugar, and we know we’re biased…but it’s quite incredible.

Ingredients

in order to make whoopie pies

  • 3/4 cup sugar (brown)
  • 1/2 cup softened butter
  • 2 big room-temperature eggs
  • 1 teaspoon extract de vanille
  • 2 cups flour (all-purpose)
  • 1 teaspoon powdered baking soda
  • 1 teaspoon bicarbonate of soda
  • a pinch of cinnamon
  • a half teaspoon of salt
  • 1 cup carrots, shredded
  • 1/3 cup shredded sweetened coconut
  • a quarter cup of raisins

for the cream cheese icing

  • room temperature 1/2 cup unsalted butter
  • 4 ounces softened cream cheese
  • 1 teaspoon extract de vanille
  • a half teaspoon of salt
  • 3 cups powdered sugar

Instructions

in order to make whoopie pies

  1. Preheat the oven to 350°F and put aside a baking sheet lined with parchment paper. In a large mixer bowl with a paddle attachment, cream the butter and sugar for two minutes, or until light and fluffy. Mix in the eggs and vanilla extract until everything is well blended.
  2. Sift together the flour, baking powder, baking soda, cinnamon, and salt in a separate dish. In a small mixing bowl, blend the dry ingredients with the liquid components until barely incorporated. Remove the bowl from the mixer after scraping down the sides.
  3. Combine the carrots, coconut, and raisins in a mixing bowl and stir until well combined. Scoop the dough onto the prepared baking sheet with a big cookie scoop, allowing approximately 2 inches between each cookie. Bake for 15 to 18 minutes, or until light golden brown around the edges and the cookie springs back when lightly touched. Allow time for cooling.

for the cream cheese icing

  1. In a stand mixer fitted with a paddle attachment, cream together the butter and cream cheese. Whip the butter and cream cheese together for 4 minutes, or until light and fluffy. Whip in the vanilla extract, salt, and powdered sugar for another 2 minutes to mix.
  2. Snip the end of a piping bag or plastic bag to create a big hole in the frosting. Place one cookie on top of another and sandwich them together with a generous coating of icing. Carry on with the remaining cookies in the same manner.
