This is a granola that has been made with carrots, coconut flakes, and raisins. It also includes oats, honey, and cinnamon.

This Carrot Cake Granola is packed with carrots, coconut, cinnamon, and raisins, and it takes breakfast to the next level. Gluten-free, refined-sugar-free, and packed with filling ingredients to keep you satisfied all morning.

One of my favorite desserts is carrot cake. It’s full, juicy, and gently spicy. It’s chock-full of carrots, coconut, raisins, and other goodies. Oh, and cream cheese icing is frequently included. Let the carrot cake begin!

Cake, however, felt a tad heavy this week, what with it being the middle of summer and all. What’s the ultimate result? All the tastes of carrot cake in a granola that’s great on top of yogurt, milk, or on its own. However, be aware that it is addictive.


I cooked it twice: first to make it chewy and moist, and then again to crisp up the exterior for a crunch in every mouthful.

  • a quarter-cup of coconut oil
  • a third of a cup of almond butter
  • 2 tsp vanilla extract (pure)
  • 13 cup of honey
  • a quarter teaspoon of salt
  • 2 tsp cinnamon powder
  • nutmeg (1/2 teaspoon)
  • a quarter teaspoon of ginger
  • 3/4 cup carrots, finely shredded
  • 2 cups oats, old fashioned
  • a half cup of raisins
  • 12 cup coconut flakes, shredded (I used sweetened, but you can use whatever you prefer)
  • chia seeds (2 tblsp.)
  • 12 cup flax seeds, organic
  • 34 cup almonds, whole (roasted or plain)


  1. Preheat the oven to 350 degrees Fahrenheit. Preheat oven to 350°F. Line a 913-inch baking sheet with parchment paper. Remove from the equation.
  2. Combine coconut oil, almond butter, vanilla extract, honey, salt, and spices in a large mixing bowl. Stir in the remaining ingredients until they are uniformly distributed.
  3. Pour the mixture into the pan and level it out evenly to the sides (use the spatula to smooth things out). Bake for 35 minutes, or until the edges of the granola are softly golden brown. Allow it cool somewhat (approximately 15 minutes in the freezer will do it), then break apart with your fingers until only tiny pieces remain, then return to oven for another 10 minutes. The granola will be nicely crisped as a result of this! Allow for thorough cooling before bagging.
