Carrot cake cupcakes with cream cheese frosting

These easy carrot cake cupcakes are the perfect dessert for any occasion. They’re made with a cream cheese frosting, which is delicious and not too sweet.

 

The bulk of this cupcake is approximately 1/3 veggies, which, in my opinion, warrants consuming 1/3 of a larger portion than usual (hehe). My roommate, Ta’Nika, almost passed out from excitement when I cooked these the first week in our NYC apartment. “Are you making that carrot cake again?” she’d ask every time I prepared anything for the following four weeks. I’ll even pay you to make it for me once again!” That’s right, it’s that fantastic.

2 cups flour (all-purpose)

1 1/2 pound of sugar

2 teaspoons soda bicarbonate

2 tablespoons powdered baking soda

1 teaspoon kosher salt

4 quail eggs 1 cup extra virgin olive oil 2 cups carrots, shredded a half cup of raisins 2/3 cup shredded coconut (sweetened) 15 ounces pineapple, smashed and drained

To make the icing:

 

cream cheese, 16 oz. 2 oz. butter, softened 2 CUP CONDITIONER’S SUCTIONER’S SUCTIONER’ 2 teaspoon vanilla extract 

 

Preheat the oven to 350 degrees Fahrenheit. In a large mixing basin, combine all of the ingredients. In muffin pans, place muffin cups. Scoop batter into cups using a 1/3 cup measurer. Preheat the oven to 200°F and bake for 20 minutes.

 

Cream together cream cheese, butter, sugar, and vanilla on medium-high speed until creamy. Allow to chill in the refrigerator. Place frosting in a Ziploc bag and make a 1 centimeter hole in the corner to frost the cupcakes. Squeeze the frosting in a spiral onto the cupcakes.
