So, why not combine those two delectable desserts to create the most delectable carrot cake cheesecake bars you’ve ever tasted? They’re delightfully spicy, sweet, tangy, and ridiculously simple to prepare!

We all know how well cheesecake and cream cheese frosting go together, so carrot cake cheesecake bars are like a match made in heaven. We made a thick, delicious carrot cake bar by adapting our favorite carrot cake recipe and adding enormous dollops of our favorite cheesecake batter.

The beauty of cheesecake swirling desserts is that they are far more forgiving than traditional cheesecakes. There’s no need to be concerned about your cheesecake breaking or shattering. Simply follow these four simple steps to make beautiful carrot cake cheesecake bars every time.
- Make sure your ingredients are at room temperature: If you’re making a dessert with a cheesecake component, it’s critical that your ingredients are at room temperature. Your cheesecake and egg will not blend effortlessly into that lovely cheesecake batter if they are not at room temperature. Leave your cream cheese out on the counter for at least 3 hours!
- Use high-quality ingredients: This recipe asks for basic components that will truly come through in the finished result, so make sure you use nice butter (we like Vermont Creamery) and cream cheese (we like Philadelphia).
- Do not overmix the mixture, which applies to both the cheesecake and carrot cake batters. If you overmix the carrot cake batter, it will turn bready and tough, which is the last thing you want in a delicate, melt-in-your-mouth cake batter. Also, overmixing the cheesecake can aerate it and cause it to crack! Only mix until everything is uniformly distributed and homogeneous.
- Don’t overbake them: Anything overbaked is sad in my eyes, but overbaked cheesecake is just disgusting. It develops a sticky, rough consistency that, to put it bluntly, does not taste good. When you take out the bars just after they’ve been set, a knife comes out mostly clean!

Ingredients
to make a carrot cake
- a quarter cup of brown sugar
- 3/4 cup melted butter
- 1 egg yolk + 1 egg
- 1 1/2 cup carrots, grated
- 1 teaspoon extract de vanille
- 1 1/4 cup flour (all-purpose)
- cinnamon (1 1/2 teaspoons)
- a quarter teaspoon of baking powder
- a half teaspoon of salt
- 1 teaspoon zest of orange (optional)
for the swirled cheesecake
- 4 oz. room temperature cream cheese
- 1 room temperature egg
- a quarter cup of granulated sugar
- 1 teaspoon extract de vanille
Instructions
- Preheat the oven to 350°F and line the bottom and edges of a 9 × 9 square pan with parchment paper. In a mixing dish, combine the brown sugar and butter. To mix the ingredients, whisk them together. Mix in the carrots, vanilla essence, and eggs.
- Mix in the flour, cinnamon, baking powder, salt, and orange zest just until mixed and no flour streaks remain. Be careful not to overmix!
- Set aside the carrot cake batter in the prepared pan while you create the cheesecake layer.
- In a mixing bowl, whisk together the softened cream cheese, egg, granulated sugar, and vanilla until smooth and homogeneous (if using a stand mixer, use the paddle attachment). Overmixing can include too much air into your batter.
- Drop dollops of cheesecake batter on top of the carrot cake batter and swirl them together with a butter knife. Preheat the oven to 350°F and bake the bars for 30 minutes, or until a knife inserted in the center comes out largely clean.
- Allow the bars to cool fully before slicing them into squares and eating them!
