It’s a family favorite that puts the focus on one of Caroline’s most comforting treats. This chocolate cake makes so much sense, you don’t even need to use frosting-just enjoy it plain!

I baked a cake for the occasion. There’s also a train. It’s a train-themed cake. I used a store-bought buttercream (this one!) and food coloring to make this simple pound cake. The “C-E-A” is a play on the NYC subway system’s A-C-E trains, only C-E-A stands for my buddy Caroline’s initials. Despite the fact that Caroline is now a 20-year-old woman, this cake is appropriate for 6-year-old boys. Or, alternatively, gals. Whatever makes you happy. Regardless, it’s pretty cute, and I’m pleased with the outcome.
To take the train:
2 1 1/2 cup sugar 1 1/2 cup flour 2 teaspoons of baking powder 1 teaspoon of baking soda a quarter teaspoon of salt 1/2 gallon of milk 3/4 cup safflower or canola oil 2 tsp vanilla extract 4 quail eggs
Preheat the oven to 325 degrees Fahrenheit. Combine all ingredients in a large mixing basin. Pour into a regular loaf pan and bake for 35 minutes, or until knife inserted into pan comes out clean. Allow to cool fully before serving.
Separate the icing into two portions while the cake is baking (one should be 1 cup, the other should be 3 cups). One will be used to make the cake’s main layer, while the remainder will be utilized for piping later. For the train’s outer color, dye the bigger three cups in the color of your choosing. Remove from the equation.
Skim off the edges of the pound cake using a serrated knife on a cutting board, forming a 90° angle with the board. Then, carefully frost each side, making sure the buttercream is evenly distributed. Place the cake in the fridge for 30 minutes after frosting to allow the buttercream to set (this will make it easier to pipe later on).
Decorate the cake with the remaining 1 cup of frosting as desired. Obviously, I divided that one cup into three colors and went to town piping. A 3 mm piping tip was employed.
The remainder of the cake is completely up to your imagination! So go ahead and do what you want, and happy trails!!
