It’s a filling, delicious way to start the day without being too sweet. And I think this cardamom pistachio bundt cake is my fave. It’s topped with a deliciously crunchy pistachio streusel and flavored with a hearty amount of warming cardamom spice.

Also, goddamn. It’s excellent.

Cardamom is one of my favorite spices.

You may be aware that I have I spent the summer of 2009 in northern India. It had been the most wonderful summer of my life. I walked across the Himalayas, lived with a Ladakhi farming family, saw small mountain communities, and met His Holiness the Dalai Lama. It was a once-in-a-lifetime experience. The faint chime of bells and the scent of mountain air greeted each day. I’d be well-rested and relaxed when I awoke. I’d go downstairs for tea after a few minutes of resting.

The tea was fantastic. We drank as many cups of chai as we could every morning since tea is translated to ‘chai’ in India. It was normally 3-4 scalding hot mugs for me. Boiling water, yak milk, black tea leaves, a variety of spices, and sugar were used to make the tea. It had a flavor that was slightly comparable to the chai tea that most of you are familiar with, but it was less spicy and more well-rounded.

Cinnamon, ginger, cloves, and, most fragrantly, cardamom were all present. Cardamom is still one of my favorite scents, if not my very fave. I kept inhaling the cardamom pods I purchased while making this coffee cake. It transported me back to those mornings, when I was sitting on a stone terrace in the Indian heat, sipping large quantities of tea.

Let’s go on to the cake. It also happens to be the world’s softest coffee cake. It has an unearthly feel that dissolves in your tongue. What about the pistachio streusel on top? Let’s just say I couldn’t stop myself from picking at the crumbs on the plate’s bottom. Sold?

Ingredients

for the icing

  • 12 tbsp unsalted butter (at room temperature)
  • 1/2 cup sugar (granulated)
  • a half cup of brown sugar (light)
  • 3 big room-temperature eggs
  • 1 tbsp extract de vanille
  • 2 1/2 cups flour (all-purpose)
  • 2 tablespoons powdered baking soda
  • 1/2 teaspoon bicarbonate of soda
  • 1 teaspoon cardamom, freshly ground
  • 1 teaspoon kosher salt
  • 1 cup plain yogurt (non-fat or low-fat)

for the swirl of brown sugar

  • a half cup of brown sugar
  • 1 teaspoon cinnamon powder
  • 1/2 teaspoon cardamom powder

for the streusel with pistachios

  • pistachios, 1/2 cup
  • 2 tsp. cardamom, freshly ground
  • 1/3 cup flour (all-purpose)
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter, cut into tiny pieces when cold
  • salt (1/4 teaspoon)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Line the bottom of a tube pan with parchment paper, then butter the sides. Remove from the equation.
  2. In a large mixing basin, cream together the butter and sugars until light and fluffy. Combine the eggs and vanilla essence in a mixing bowl.
  3. Whisk together the flour, baking powder, baking soda, powdered cardamom, and salt in a separate basin. Slowly fold in the flour mixture and low-fat yogurt into the wet ingredients, alternating until everything is incorporated.
  4. To prepare the streusel, in a food processor, combine the pistachios, cardamom, flour, and sugar and pulse until the nuts are thoroughly minced. Pulse in the butter until it is well distributed.
  5. Pour half of the batter into the tube pan and, if desired, sprinkle with brown sugar. Pour in the remaining batter, then sprinkle the pistachio streusel over top. Squeeze the streusel between your hands until it’s as thick as wet sand, then sprinkle it over the batter. Allow to cool somewhat before removing from pan after baking for 50 minutes.
