Caramelized Onion, Mushroom, & Spinach Pizza

This classic pizza recipe is a great way to use up leftover vegetables and make sure your kitchen has something comforting on hand. The flavors of the pizza come from caramelized onions, mushrooms, and spinach that are sautéed with garlic for extra flavor.

A make-your-own-pizza night was one of Alex’s and my favorite low-key things to do in college. We’d grab pizza dough from a nearby pie restaurant and divide it in half. Alex would prepare his own pizza, and I would make mine, and then we’d compare notes. It’s like a pizza eating contest. 

“I really like the combination of cheeses you used on yours.”

“Yeah, but yours has killer barbeque chicken.”

Then we’d choose a pizza champion. Regardless matter who won, both pizzas would be devoured to the last bite, filling our appetites and hearts.

Instead of buying pizza dough from our neighborhood pizzeria, I opted for Pillsbury’s Best Pizza Dough, one of the newest varieties of pizza dough available in the refrigerated dough department of the supermarket.

All you have to do with this pizza dough is unroll it, cover it with your preferred toppings, and bake it, just like the famous Pillsbury crescent rolls. It’s prepared with all-natural ingredients and tastes fantastic. It’s also packaged in parchment paper, which makes cleaning a snap.

I made a Caramelized Onion Mushroom and Spinach Pizza, and let me tell you, it would have won if I had brought it to Alex’s and my pizza night. I really like the idea of making pizza poppers with this pizza dough. Who’s up for it?!

Here’s how to prepare this simple pizza recipe.

All you have to do for this caramelized onion, mushroom, and spinach pizza is grill the toppings since the dough is all prepared and ready to use! You’ll need the following ingredients to prepare this delicious pizza:

Caramelize the onions – It takes time to caramelize onions. To begin, heat some butter in a pan before adding the cut onions. Maintain a medium heat setting and resist the impulse to stir the onions every 5 seconds. There’s no way to speed up the caramelization process, which will take 10-15 minutes.

Saute the mushrooms – When the onions are almost done, add the mushrooms for the final few minutes of cooking. Now is the time to cook down the mushrooms so they don’t wet up the pizza in the oven.

Top your pizza and bake – Spread the vegetable mixture over the pre-baked pizza dough, then top with cheese and spinach. Preheat the oven to 350°F and bake your delicious homemade pizza until the cheese is bubbling and brown around the edges.

The best way to freeze pizza

If you have any leftover mushroom, onion, and spinach pizza (which is a lovely issue to have), you can either keep it in the fridge for a day or two, or freeze it for later. To freeze pizza, slice it and set it aside to cool fully on your counter. Wrap 2-3 slices in two pieces of plastic wrap, followed by a layer of foil. You may also freeze the pizza slices in a freezer-safe baggie.

When you’re ready to eat your frozen pizza, place the frozen pieces in the oven and bake for 10 minutes or until cooked through at 325°F. (Reheating the pizza in the microwave will cause the slices to get soggy.)

Ingredients

  • 1 box Pillsbury’s Best thin crust pizza dough, refrigerated
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon unsalted butter
  • 1 onion, thinly sliced
  • salt (1/4 teaspoon)
  • 8 ounces button mushrooms, sliced
  • 2 garlic cloves, minced
  • 1 cup spinach leaves, baby
  • 1 1/2 cups mozzarella cheese, shredded
  • 1/2 cup grated parmesan
  • 1 teaspoon fresh thyme leaves, chopped

Instructions

  1. Preheat the oven to 425 degrees Fahrenheit. Using oven-safe parchment paper, unroll the dough and arrange it on a large baking sheet (dough bakes on paper). Olive oil should be brushed over the surface. 7 minutes in the oven Remove the dish from the oven and put it aside.
  2. In a medium nonstick skillet, melt butter over medium heat. Cook, stirring periodically, for 10-15 minutes, until onion softens and starts to brown. Cook for a further 5-7 minutes, or until mushrooms are softened and starting to brown. Remove from heat after stirring in the garlic.
  3. Evenly spread the mushroom mixture over the dough. Add spinach, mozzarella cheese, and Parmesan cheese on the top.
  4. Bake for an additional 7 to 11 minutes, or until the cheese has melted and the crust is golden brown. Thyme should be sprinkled on top.

Healthy, slim, simple, and homemade are some of the adjectives that come to mind when thinking about vegetables.
