Ingredients

for the pretzel bars with peanut butter

  • 3 cups pretzels, smashed
  • 1 cup peanut butter, creamy
  • 1/4 cup room temperature butter
  • a third of a cup of powdered sugar
  • vanilla extract (1/2 teaspoon)

for the top of the caramel pretzels

  • 1 cup sugar (granulated)
  • 6 tablespoons room temperature butter
  • heavy cream, 1/3 cup
  • a quarter teaspoon of salt
  • For the top, 1/2 cup whole pretzels

Instructions

  1. All sides of an 8 × 8 ” square pan should be lined with parchment paper. If you don’t have parchment paper, line the pan with tinfoil and thoroughly butter the tinfoil. Remove from the equation.
  2. Pretzels should be roughly crushed in a food processor or placed in a big plastic bag and broken down with a rolling pin. Remove 3 cups of smashed pretzels from the oven and set aside.
  3. Combine the butter and peanut butter in a large mixing bowl and beat until smooth. Mix in the powdered sugar and vanilla extract. Mix thoroughly. Stir in the crumbled pretzels last.
  4. Transfer the peanut butter pretzels mixture to the prepared pan, flatten into an equal layer, and chill while you create the caramel layer.
  5.  Heat the sugar in a heavy-bottomed sauce pan over medium-low heat, stirring the pan gently every 20 seconds or so, until it is fully melted. Before gently melting, the sugar will begin to form clumps. Be patient and keep an eye on it to prevent it from burning.
  6. Remove the pan from the heat as soon as it has melted and mix in the butter. The mixture will erupt in a flurry of bubbles. You’re doing everything correctly. Pour in the heavy cream and season with salt. Stir everything together until it’s completely smooth. Allow it cool in a large mixing basin for a few minutes.
  7. Stir in the remaining 1/2 cup of whole pretzels to coat the pretzels in the caramel.
  8. Cover the peanut butter bars with caramel-coated pretzels. Drizzle with melted chocolate if desired! Lift the foil out of the pan with the bars, peel the foil off, and cut into squares with a sharp knife.
