Buffalo Cauliflower Wings

Hello, everyone! Here’s Sofi. Because that’s when Sarah and I met last year, it feels appropriate to write our annual game day snack article this year! Do you remember the Vegan Chili Cheese Dogs? I know I do…they’re rather memorable. With this amazing buffalo cauliflower wings recipe, we’re back with more vegetable game day delights this year. It’s simple to prepare, a crowd-pleaser, flavorful, and somewhat healthful.

It fulfills all of my requirements!

Don’t get it mixed up. Cauliflower is not the same as chicken. Duh. Although it would be ridiculous to claim that these vegan buffalo wings taste exactly like buffalo chicken wings, they are rather excellent in their own right. If you’re in the mood for some buffalo heat, these baked buffalo cauliflower wings should do the trick.

They’re also baked! That is, you can eat 10 times as much as you want and not feel guilty about it.

How to Make Vegan or Gluten-Free Cauliflower Buffalo Wings:

With a few easy substitutions, this recipe may easily be turned vegan and/or gluten free!

Buffalo Cauliflower Wings (Vegan):

  • Almond milk (or any neutral-flavored plant-based milk) is used to make the buttermilk: Simply combine 3/4 cup milk and 1 tablespoon apple cider vinegar in a bowl and let aside for 5 minutes. That’s all there is to it: plant-based buttermilk.
  • Coconut oil or vegan butter may be used in lieu of butter: Substitute melted coconut oil or melted vegan butter for the melted butter in the buffalo sauce coating (we adore Miyokos!). (This isn’t a paid advertisement; it’s simply the truth!)

Cauliflower Buffalo Wings (gluten-free):

  • Substitute gluten-free flour for the wheat in the coating: No concerns if you’re gluten-free! Simply replace the all-purpose flour with a gluten-free mix, cup for cup! Bob’s Red Mills is one of our favorites!

Cauliflower Buffalo Wings: How to Store Them

Because cauliflower, like other vegetables, has a high water content, these buffalo cauliflower bites are best eaten just out of the oven. The more time the wings rest, the more moisture the cooked cauliflower releases, losing part of the crispness you seek in a buffalo wing. We urge that you follow these guidelines:

  • Wait until you’re ready to dine to prepare the “wings”: Because this recipe is so simple and fast to make, the best thing you can do is wait until the last minute to bake them.
  • If you’re juggling a lot of other apps on game day and really want to have everything ready to go, you can chop the cauliflower into florets days ahead of time and create the buttermilk coating up to 3 hours ahead of time, so all you have to do is assemble and bake it in the oven!
  • Prepare only as much as you’ll need: These vegetable buffalo wings are best served fresh from the oven, so only make as much as you’ll need. I prefer to purchase all of the ingredients for a few batches and then simply cook them as required on the day I’m serving so that nothing goes to waste!
  • Reheat in a clever way: If you do have leftovers (which we seldom do), the easiest method to reheat these quick buffalo cauliflower wings is in the same oven where you cooked them. To give the wings more crunch, place them on a baking sheet lined with parchment paper and bake for 8 minutes on each side at 400°F.

  • 1 cauliflower head, sliced into florets
  • flour, 3/4 cup
  • 1 teaspoon paprika powder
  • 1 teaspoon powdered onion
  • 1 teaspoon powdered garlic
  • 1 teaspoon kosher salt
  • a quarter cup of buttermilk
  • 2 teaspoons melted butter
  • 1/3 cup Buffalo Sauce (Frank’s was used!)

  1. Preheat the oven to 375°F and parchment paper two baking sheets. Remove from the equation.
  2. Combine the spices, salt, and flour in a large mixing basin. Stir in the buttermilk until it is completely mixed. It should be a rather thick mixture!
  3. Toss the cauliflower florets into the buttermilk mixture, evenly covering each piece. Place the coated cauliflower on the prepared baking trays, allowing enough space between each piece for air to circulate.
  4. Bake for 20 minutes, then turn the cauliflower to ensure an even bake on the other side. On the opposite side, bake for another 20 minutes!
  5. Make the buffalo sauce while the cauliflower bakes. Incorporate the buffalo sauce and melted butter in a mixing bowl and whisk to combine.
  6. Add the cauliflower florets to the bowl with the spicy sauce mixture when it’s done. Toss to blend, then eat!
