It’s Halloween season. Bring on the gallons of Halloween sweets, anything pumpkin spiced, including these adorable mummy Rice Krispie treats. These Rice Krispie treats were created with browned butter and coated in white chocolate, making them not only adorable but also tasty. These were so good that we couldn’t stop eating them. The pan was gone by lunchtime, no kidding. I ate them for breakfast and lunch, justifying my actions by claiming that they are essentially a bowl of cereal? They’re hardly quite cereal, are they? RIGHT?!

Ingredients

  • a third of a cup of unsalted butter
  • a sprinkle of salt
  • 1 teaspoon extract de vanille
  • a package of marshmallows weighing 16 ounces
  • Rice Krispies cereal, 5 cups
  • 2 cups chocolate chips (white)
  • 1 tsp virgin coconut oil
  • Add some googly eyes to the mix.

Instructions

  1. Set aside a 9 × 9 pan that has been greased with cooking spray.
  2. Brown the butter in a big saucepan over medium heat, stirring regularly until it foams and becomes golden brown, releasing a nutty scent.
  3. With a rubber spatula, mix in the marshmallows and salt, scraping down the edges to prevent the marshmallows from burning. Remove the pan from the heat and add the vanilla essence.
  4. Fold in the Rice Krispies to fully cover the cereal.
  5. Fill the prepared pan halfway with the mixture and push it down into an equal layer.
  6. Refrigerate for at least 20 minutes to allow flavors to meld. Once the Rice Krispie treats have hardened, cut them into 12 rectangles using a sharp knife.
  7. Melt the white chocolate and coconut oil in 15 second intervals in a microwave-safe dish, stirring after each. Rep until the mixture is totally melted and smooth.
  8. To coat evenly, dip the Rice Krispie treats approximately 2/3 of the way into the white chocolate. Place your googly eye sprinkles where you want them.
  9. Fill a piping bag or a ziploc bag with the remaining white chocolate and snip off a little piece to form a small hole. Drizzle extra white chocolate over the top and bottom of the mummies to make them appear like mummies. Refrigerate for 20 minutes to let flavors to meld.
  10. Enjoy!
