I took these bad guys to a small dinner party at a friend’s place, and the whole pan was consumed in less than 10 minutes. The mix of brown butter, hazelnut crunch, Nutella familiarity, and chewy cookie foundation is to die for, not to mention that I adore bars and how simple they are to make.

What is brown butter, and how does it differ from regular butter?

Brown butter is just ordinary butter with the milk solids “toasted” in it. Brown butter gets its name from the fact that it becomes brown. Duh. It acquires a lovely nutty, toasted caramel flavor that makes you want to drink it right away.

Brown butter is made in the following way:

You must try brown butter if you haven’t before. Browning butter adds a depth and richness to a variety of dishes, including these Nutella cookie bars.

  1. To begin, melt the butter in a small sauce pan over medium heat.
  2. To ensure that the butter is uniformly heated, whisk it frequently while it melts. The butter will begin to froth as it melts. This is the sweet spot between boiling the butter (which is NOT what you want) and not getting the butter heated enough.
  3. Keep an eye out for the butter. DO NOT WALK AWAY, for example. It changes color from its regular yellow to a richer golden tone and finally to a lovely light brown. The fragrance will tell you it’s done: roasted, nutty, and heavenly. It may rapidly turn from light brown to burned, so remove it from the fire as soon as you notice the change.
  4. Remove it from the fire and place it in a basin to cool before using in your recipe.

How to quickly peel hazelnuts:

If you’re wondering, “Do I really have to blanch them?” Yes, yes, yes, yes, yes, yes, yes, yes, yes, yes When hazelnut shells are cooked, they become quite bitter. You don’t need that type of negativity or these Nutella cookie bars in your life.

In general, there are two methods for peeling hazelnuts, the second of which I would strongly suggest. The first method is roasting the hazelnuts, then putting them in a dishtowel to steam, and finally wiping the skins off vigorously. I would not suggest it. I spilled a lot of hazelnuts on the kitchen floor and somewhat burnt my hands, so…no. Simply said, don’t do that.

Boil a cup of water for every half cup of hazelnuts. Add a teaspoon of baking soda and the hazelnuts after the water has reached a boil. Boil for 2–3 minutes, or until the skins have turned the water dark brown/red. By running one nut under cold water, you can see whether the hazelnuts are done. The skin should easily peel away. If it doesn’t boil after 30 seconds, give it another attempt. Blanched hazelnuts are as simple as washing and draining your hazelnuts.

Ingredients

  • 3/4 cup browned unsalted butter
  • 1 cup brown sugar (light)
  • 1/2 cup sugar (white)
  • 1 egg yolk and 1 egg
  • vanilla extract (two tablespoons)
  • a half teaspoon of salt
  • 2 cups flour (all-purpose)
  • a quarter teaspoon of baking soda
  • 1/2 cup chocolate chunks (semisweet)

  • Nutella (7.5 oz) (about a half a standard size jar)
  • sprinkling coarse sea salt (optional, but delicious)

Instructions

  1. Preheat the oven to 3750 degrees Fahrenheit and prepare a baking sheet with parchment paper. Bake for 10-15 minutes, or until the blanched and chopped hazelnuts are just a light golden brown, on the baking sheet. Allow to cool before serving.
  2. Reduce the oven temperature to 3500F and prepare an eight-by-eight-inch square pan with parchment paper.
  3. Brown the butter in a medium saucepan over medium heat, stirring frequently, until it foams and becomes golden brown, giving a nutty scent. Remove the butter from the heat and set it aside to cool.
  4. Combine the cooled brown butter, brown sugar, and white sugar in a large mixing basin. Mix everything together until it’s smooth. Combine the egg, egg yolk, and vanilla essence in a mixing bowl. Mix thoroughly.
  5. Combine the flour, salt, and baking soda in a separate basin. Combine the dry and wet components and stir until everything is well combined. Using a spatula, fold in the chocolate chunks and chopped hazelnuts until well combined.
  6. Press half of the cookie dough into the bottom of the pan to make an equal layer.
  7. On top of the dough, spread a thick layer of Nutella (we used about a half a jar). Drop heaping spoonful of the remaining cookie dough on top of the Nutella.
  8. Make a small flattening with your palm. There should still be some Nutella visible; this is what will make your swirls.
  9. Bake for 30 minutes at 350°F, or until golden brown on the sides but still gooey in the centre. Allow to cool before adding the sea salt. Serve with a glass of milk and cut into 9 squares.
