We added brown butter for flavor, greek yogurt to make it moist, and 5 bananas since it’s a banana cake, and we wanted the banana taste to shine through despite all the other delights.


Suggestions for keeping banana bread moist

Use overripe bananas—A sweet, moist, fragrant loaf of banana bread requires very ripe, even brown, bananas. If your bananas aren’t quite ripe but you still want to create a loaf, poke them a few times with a fork and bake them for 10 minutes until golden.   • 5 bananas that are exceptionally ripe (even brown), mashed
  • 3/4 cup unsalted butter (1 1/2 sticks), melted and browned
  • 3 room-temperature eggs
  • 9 oz. greek yogurt (nonfat)
  • 3 teaspoons extract de vanilla
  • 2 1/2 cups flour (all-purpose)
  • 2 teaspoon bicarbonate of soda
  • 2 tbs granulated sugar + 1 cup
  • a half teaspoon of salt
  • 2 cups chocolate chips, mini

icing made with cream cheese

  • 4 oz. room temperature cream cheese
  • room temperature 1/2 cup unsalted butter
  • a third of a cup of powdered sugar
  • vanilla extract (two tablespoons)
  • a half teaspoon of salt
  • 1–2 tablespoons milk (whole)
  • walnuts, finely chopped (optional)


  1. Preheat the oven to 350 degrees Fahrenheit. Grease and flour a 9 x 13″ sheet pan or line it with parchment paper. Remove from the equation.
  2. Brown the butter in a medium sauce pan over medium heat, whisking continually until it foams and browns. Keep an eye on it and make sure it doesn’t boil! When it begins to smell toasted and nutty and takes on a golden colour, it’s done.
  3. Incorporate the mashed bananas and brown butter in a large mixing basin and toss to combine. Combine the eggs, Greek yogurt, and vanilla extract in a mixing bowl. Remove from the equation. Combine the flour, baking soda, salt, and sugar in a separate basin. Combine the dry and wet ingredients in a mixing bowl. Stir in the chocolate chunks until they are completely mixed.
  4. Bake for approximately 40 minutes, or until a knife inserted in the middle comes out clean and the cake bounces back to the touch. Allow for thorough cooling before icing.

  1. Lightly whip the softened cream cheese, butter, powdered sugar, vanilla, and salt in a stand mixer equipped with the paddle attachment until light and fluffy. To keep the frosting light, add milk as needed.
  2. When the cake has cooled, frost it and sprinkle walnuts on top. Enjoy!
