A good ol’ fashioned pecan pie is the epitome of Thanksgiving. With the exception of Bourbon Chocolate Pecan Pie, that is.

Don’t get me wrong: we adore traditional pecan pie, but this modernized version of the Thanksgiving staple steals the cake…err, the pie? With the addition of whiskey and chocolate, you get the gloriously gooey, but crunchy texture and salty-sweetness of a typical pecan pie.

Ingredients

  • 9-inch unbaked pie crust (either store-bought or handmade)
  • Karo® Light Corn Syrup, 3/4 cup
  • 3/4 cup brown sugar (light)
  • 2 room temperature eggs
  • 2 teaspoons melted butter
  • a half teaspoon of salt
  • 1 tbsp extract de vanille
  • bourbon (2 tblsp) (optional)
  • 2 1/2 cups pecans, chopped (roasted & salted preferred)
  • Bittersweet chocolate, 4 oz., coarsely chopped

Instructions

  1. Preheat oven to 350°F. 
  2. Whisk together Karo® Light Corn Syrup, brown sugar, eggs, melted butter, salt, vanilla extract, and bourbon in a large mixing basin (if using). Stir in the chopped chocolate and pecans until everything is well combined.
  3. Transfer the pecan filling to the prepared pie crust, smoothing the nuts and chocolate into an equal layer using a spatula. 
  4. Bake for 30 minutes, then remove from oven and cover with tin foil to keep the crust from browning too much. With the foil on, cook for a further 20 minutes. 
  5. Remove from the oven and refrigerate for at least 2 hours before serving!
