Blueberry Cheesecake Ice Cream

Ice cream is one of the most popular desserts in America and around the world. The recipe for this particular blend was created by a woman named Helen Cooper, who just happened to be driving down I-95 when she saw some blueberries on sale that day. After finding it hard to pass up such an opportunity, Helen added them into her ice cream mix. It became so successful that it soon went viral!

I have a thing for blueberries. I eat them all. It’s a fantastic, beautiful thing. I use them in pancakes, fruit salads, and Blueberry Cheesecake Ice Cream, among other things.

Because the batch of ice cream I just made is beyond fantastic, the latter is presently my favorite way to consume blueberries. And it’s chock-full of antioxidants! Teehee…

The creaminess of this ice cream is something I really like. Other ice creams in my freezer are a bit softer, but this one is excessively smooth. The taste is spot on, and the color is a blast! 


Furthermore, creating a blueberry cheesecake is a major undertaking. You end up with a massive cake that you have to share with your friends, colleagues, partner, and anybody else you can think of so you don’t wind up eating cheesecake for dessert every night on your sofa alone.

However, it is not a horrible life.

Making Blueberry Cheesecake Ice Cream, on the other hand, requires less effort. You take one or two scoops, put the remainder in the freezer, and keep the rest for Tuesday.

  • 3/4 cup brown sugar (light)
  • 3 big yolks of eggs
  • 1/2 gallon heavy cream
  • 3/4 gallon of whole milk
  • 1 teaspoon kosher salt
  • 6 oz. softened cream cheese
  • 8 oz. blueberries, fresh
  • lemon zest (1/2 lemon)


  1. Whisk together the yolks and 14 cup brown sugar until smooth. Remove from the equation. In a medium saucepan, boil the cream, milk, remaining 12 cup sugar, and salt for 2-3 minutes, or until the sugar is dissolved and the milk is almost simmering. Reduce the heat to low and pour 12 cup of the milk mixture into the whipped yolks, stirring constantly. Pour another 12 cup of milk into the yolks, stirring constantly to ensure complete mixing.
  2. Return the warm yolk mixture to the saucepan, whisking constantly to ensure complete mixing. Then, while the custard mixture is heating, gently whisk it with a spatula. In 3-5 minutes, the custard should thicken. When it coated the back of a spoon and keeps its form when you pull your finger through it, it’s ready.
  3. Remove from the heat immediately and mix in the cream cheese and lemon zest. If your cream cheese curdles, strain it through a fine screen to eliminate any lumps.
  4. In a blender, pulse the blueberries until they are liquefied. Incorporate into the ice cream mixture.
  5. Place the mixture in a large ziplock bag and refrigerate for at least 4 hours, or up to overnight.
  6. Fill your ice cream maker halfway with ice cream and churn according to the manufacturer’s directions. Allow for at least 6 hours of hardening in a freezer-safe container. After that, serve!
