Banana Nutella Muffins

I’m in Malibu right now, seated at a little table next to a huge floor-to-ceiling window with a view of the Pacific. This weekend, I traveled to Los Angeles for business and then to spend time with my mother and sister on vacation. It’s been breathtakingly lovely out here, and I’m on the verge of packing everything up and traveling west.

But I’m not going to do it. Because I have some extremely exciting things planned in Detroit.


Even though I just ate a large supper with chocolate, these Banana Nutella Muffins are making me hungry. Isn’t it simply a testament to how amazing they are? I cooked these in 6 large muffin tins, but this recipe can easily be doubled to produce 12 muffins. The baking timings for both versions are shown below.


Instructions for creating banana Nutella muffins

Use overripe bananas—Bananas that are overripe, even brown, are ideal for these muffins. You want bananas that are really ripe since they are soft and tasty. Before adding them to the muffin batter, mash them thoroughly with a fork.

Don’t add any more Nutella—or, at the very least, don’t add any more Nutella to these muffins before baking them. I’m not going to stop you from slathering even more butter on these bad boys while you eat them. You run the danger of overfilling the muffin pan if you add more Nutella than the recipe asks for before baking these banana muffins.

Don’t forget the salt—I know a teaspoon of salt in a muffin recipe sounds unusual, but I always add salt to my baked products. The salt isn’t noticeable, but it helps to bring out the sweetness of the muffins and the Nutella flavor even more. Please don’t ask me how it works; baking science is both intriguing and perplexing.

You may use half a cup of whole wheat flour instead of all-purpose flour to make these banana Nutella muffins somewhat healthier and more satisfying. I haven’t tried making these muffins with solely whole wheat flour, so I can’t comment on how they would come out if you did!


The best way to freeze muffins

You don’t want a home full of leftover muffins, do you? Put them in the freezer for later! Allow these banana Nutella muffins to cool entirely to room temperature before placing them in a freezer baggie. They may be frozen for up to three months and reheated in the microwave or oven. Alternatively, you may leave one on the counter to defrost to room temperature on its own (this will take the better part of an hour).





  • 3 bananas that are exceptionally ripe (even brown), mashed
  • 6 teaspoons melted butter
  • 2 room temperature eggs
  • 3/4 cup greek yogurt (nonfat)
  • vanilla extract (two tablespoons)
  • 2 cups all-purpose flour (1/2 cup whole wheat flour may be used)
  • 1 teaspoon bicarbonate of soda
  • a quarter cup of sugar
  • 1 teaspoon kosher salt
  • Nutella, 2/3 cup


Preheat the oven to 350 degrees Fahrenheit. Cooking spray 6 huge or 12 standard muffin cups and place in a muffin tray. Incorporate the mashed bananas and melted butter in a large mixing basin and toss to combine. Combine the eggs, Greek yogurt, and vanilla extract in a mixing bowl. Remove from the equation. Combine the flour, baking soda, salt, and sugar in a separate basin. Combine the dry and wet ingredients in a mixing bowl. Fill the muffin cups equally with the batter. Microwave for 20 seconds to melt Nutella. Drizzle Nutella over the muffins, then swirl the batter with a knife to create Nutella swirls. Bake for 20-25 minutes, or until a knife inserted in the middle comes out clean, if using gigantic muffin cups. Bake for 15-20 minutes, or until a knife inserted in the middle comes out clean, if using tiny muffin cups. Allow 15 minutes to cool before serving!
