Because you’re the messiah of cakes, I believe it’s only fair that I pass on your holiness.
To make the cake:
2 cups flour (all-purpose) 2 tablespoons powdered baking soda 1/2 teaspoon bicarbonate of soda 3/4 teaspoon cinnamon, 1/2 teaspoon salt 1/2 teaspoon ginger powder 1/8 teaspoon clove powder 1 softened stick unsalted butter 1 cup light brown sugar, packed 1 teaspoon extract de vanille 2 eggs, big 1 1/2 cup applesauce, unsweetened 1/2 cup walnuts, chopped and toasted
To make the icing:
1 tablespoon confectioners’ sugar a pinch of cinnamon 5 oz. softened cream cheese 3 tablespoons softened unsalted butter a quarter teaspoon of vanilla extract
Preheat the oven to 350 degrees Fahrenheit. Butter a 9′′x9′′ baking pan generously. Combine flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves in a large mixing basin. In a separate bowl, beat butter, brown sugar, and vanilla with an electric mixer until light and fluffy, approximately 3 minutes. One at a time, add the eggs, beating well after each addition. After that, beat in the applesauce. Turn the mixer to low and slowly pour in the dry ingredients until they are completely combined. Fold in walnuts last. It’s okay if the batter looks curdled.
Pour batter into pan and bake for 30-40 minutes, or until knife inserted in center comes out clean. Allow for thorough cooling before icing.
While the cake is baking, beat cream cheese, butter, and vanilla in a large mixing bowl with an electric mixer until light and fluffy, approximately 3 minutes. In three batches, whisk in confectioner’s sugar and cinnamon until well combined. Refrigerate the frosting for 20-30 minutes. Once the cake has cooled, frost it! It’s soooo good.
