Apple roundup and a cinnamon apple cake

Apple is always an exciting time of year! Starting with new software releases and end-of-year sales, the company has a lot to offer. This week Apple released its first hybrid iOS product in over three years – the iPad Pro 9.7in.

The “broma bakery coffee cake” is a delicious cinnamon apple cake that can be found in the bakery section of your local grocery store. The cake comes with a cream cheese frosting, but you can also make it without icing for those who are gluten-free.

Ingredients

  • 4 1/2 cups apples, diced (roughly 3 apples)
  • 3/4 cup brown sugar, medium
  • 3/4 cup sugar (granulated)
  • flour (two cups)
  • 1 teaspoon bicarbonate of soda
  • 1 teaspoon powdered baking soda
  • 1 teaspoon of cinnamon
  • 1 teaspoon kosher salt
  • basic or greek yogurt, 6 oz.
  • 1/2 cup vegetable or canola oil
  • 2 eggs
  • 1 teaspoon vanilla extract
  • garnish with whole or sliced almonds (optional)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit and butter a medium baking dish. Remove from the equation.
  2. Sift together the flour and the rest of the dry ingredients in a large mixing bowl. Combine wet ingredients in a separate bowl and stir until fully combined. Gently fold the flour mixture into the wet ingredients, just until everything is incorporated. Toss in the apples, chopped.
  3. Make sure the batter is properly divided in the baking pan before pouring it in. Sprinkle a handful of almonds on top of the cake.
  4. Bake for 40 minutes, or until a knife inserted into the center comes out clean. Allow for thorough cooling before serving.
