  • 3 tbsp. sugar (granulated)
  • 2 room temperature eggs
  • 1 3/4 gallon apple juice
  • 3 tablespoons melted unsalted butter
  • 2 cups flour (whole wheat)
  • 1 teaspoon bicarbonate of soda
  • 2 tablespoons powdered baking soda
  • 2 tsp cinnamon powder
  • a quarter teaspoon of salt

for the sugar cinnamon coating

  • 1 cup sugar (granulated)
  • cinnamon (2 tablespoons)

for the apples (cooked)

  • 2 big apples (any kind! ), peeled and cored, and cut
  • 2 tsp cinnamon powder
  • 1 tablespoon sugar (granulated)


  1. In a medium mixing bowl, whisk together the eggs, melted butter, apple cider, and sugar until smooth.
  2. Sift together the flour, baking powder, baking soda, cinnamon, and salt in a separate dish. Incorporate the dry ingredients into the wet ones, stirring gently until everything is well incorporated. Allow the batter to thicken for 10 minutes.
  3. Cook the chopped apples, cinnamon, and sugar over medium heat, turning regularly until the apples are mushy and tender, while the batter thickens. Remove from the equation.
  4. Combine the sugar and cinnamon in a small bowl to make the cinnamon sugar. Transfer to a platter or a big shallow dish.
  5. Heat a big skillet or griddle over medium heat when you’re ready to make pancakes.
  6. Grease the griddle generously with oil or butter once it’s heated (about 1 tablespoon per 3 pancakes). 14 cup batter per pancake should be poured over the surface.
