They’re a fudgy coconut pillow with a thin coating of chocolate on top and a crunchy, salted almond on top. They’re fantastic.

Ingredients

  • 1 brownie mix (from a box) (prepared according to instructions)
  • a quarter teaspoon of almond extract
  • 1/2 cup coarsely chopped roasted almonds
  • 1 can condensed milk, sweetened
  • salt (1/4 teaspoon)
  • a quarter cup of powdered sugar
  • 3 cups shredded unsweetened coconut
  • 1 1/2 cup chocolate chips (semisweet)
  • heavy cream, 1/3 cup

Instructions

  1. Preheat the oven to 350°F and prepare a 9 × 9 pan with parchment paper, allowing a 2 inch overhang on both sides. Remove from the equation.
  2. Prepare your brownie mix according to the package instructions in a large mixing bowl. Combine the almond extract and chopped almonds in a mixing bowl. Pour the batter into the prepared pan and smooth it out evenly.
  3. Bake until a toothpick inserted in the center comes out mostly clean, according to the package guidelines. Allow to cool fully after removing from the oven.
  4. Make the coconut topping while the brownies are cooling. In a large mixing bowl, combine the sweetened condensed milk, coconut, powdered sugar, and salt. Stir to blend until a thick paste forms.
  5. Smooth the coconut mixture over the brownies using a rubber spatula, spreading it all the way to the edge into a flat, even layer. Place the brownies in the fridge for half an hour to set.
  6. Make the chocolate ganache after the coconut layer has firmed up. Microwave the cream in a microwave-safe basin for 30 seconds, or until scorching. Allow 5 minutes for the chocolate chunks to absorb into the cream. Stir together with a fork or a whisk after 5 minutes. If there are any clumps left after the hot cream has melted the chocolate, microwave in 15 second intervals, stirring after each, until smooth.
  7. Place the ganache on top of the coconut layer in the fridge for at least a half hour or overnight to harden.
  8. Once the ganache has set, sprinkle with chopped almonds and slice into 9 large brownies or 16 regular brownies with a thin, sharp knife. Devour!
