Ingredients

  • 9 croissants with almonds (preferably stale)
  • 1/2 cup sugar (granulated)
  • 3 quarts of milk
  • 5 room-temperature eggs
  • almond extract (1 1/2 teaspoons)
  • 1 teaspoon extract de vanille
  • a half teaspoon of salt
  • 1/2 cup almonds, sliced

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit. Butter a 6 to 8 cup baking dish generously (we used an 11 x 7 inch casserole dish, but you can use whatever you have on hand).
  2. To carefully pack the croissants into your baking dish, cut them in half and place them around each other, tucking them beneath one another. Remove from the equation.
  3. Combine the sugar and eggs in a large mixing basin. Using a whisk, carefully combine the ingredients until they are entirely homogeneous. Whisk in the milk in a steady stream until it is entirely mixed. Combine the almond extract, vanilla extract, and salt in a mixing bowl. To blend, stir everything together.
  4. To uniformly moisten all of the croissants, pour the mixture over them. Sprinkle the sliced almonds on top of the croissants. To enable the mixture to soak in, cover with tinfoil or plastic wrap and put in the fridge for at least an hour, but up to overnight.
  5. Preheat the oven to 350°F and bake the french toast for 30 to 40 minutes, or until golden brown around the edges.
  6. Before serving, let the french toast bake to cool somewhat. Serve with maple syrup, powdered sugar, and fresh fruit on top.

Notes

  1. If you choose, you may use normal croissants or a different taste. Pistachio, chocolate, or plain croissants would also be excellent.
